Pierogi Lasagna

Pierogi Lasagna is a great way to use up leftover mashed potatoes and tastes like a creamy, cheesy, mashed potato casserole.

Ingredients

  • butter for greasing pan ( I use Pam)
  • 6 cups leftover mashed potatoes (Instant potatoes for 6)
  • 1 cup  shredded sharp cheddar cheese ( or as much as you desire )
  • 9 lasagna noodles boiled 
  • 1/2 lb. bacon, fried, drained & crumbled
  • salt and pepper, to taste
  • sour cream for serving (optional)

Instructions

Preheat oven 350 degrees.

Grease a 9x13 inch baking dish with butter or nonstick spray.

Cook noodles and drain.

Layer 3 noodles in pan, spread potatoes,then bacon pieces and then cheese. Repeat 2 more times.

 Cover with foil and bake for 35 mins. Remove from over sprinkle with some cheese and  bacon pieces, return to over for 1 min.

                          Serve with sour cream (optional)
Serves 6 to 9
