Slow Cooker Pork Roast




Servings: 8


Ingredients
  • 1 3-4 pound pork loin roast
  • 1 packet onion soup mix
  • 2 cups low sodium chicken stock
  • 1 packet pork gravy mix


Instructions


  1. Place pork loin, onion soup mix and chicken stock into a slow cooker. Place on low for 8-10 hours.
  2. Once pork is cooked, and tender remove from slow cooker and use 2 forks to shred pork.
  3. Whisk together 1 cup of juices from the slow cooker and packet of gravy mix. Add to a small sauce and a bring to a boil. Cook for 1-2 minutes until it starts to thicken.
  4. Serve shredded pork with gravy.

Crockpot Creamy Tortellini Soup



Prep Time 5 minutes
Cook Time 4 hours
Total Time 4 hours 5 minutes
Servings 8

Ingredients

  • 1 chopped onion
  • 2 cloves of garlic, minced
  • 1 Tbsp basil
  • 2 Tbsp tomato paste
  • 1/3 cup flour
  • 3 Tbsp olive oil
  • 2 cans chicken broth or 4 cups
  • 2 cans diced tomatoes (14.5 oz. each)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 cups tortellini
  • 1/2 cup fresh Parmesan
  • 1 cup heavy cream microwave for 30 seconds so it doesn't curdle when added

Instructions

  1. In a small microwave-safe bowl, stir together onion, garlic, basil, tomato paste, flour and olive oil. Microwave for 5 minutes, stirring once every minute. This will make a thick paste (the thickener for the soup).
  2. While that's microwaving, dump the contents of the cans of chicken broth and tomatoes into a 5 quart crockpot. Add salt and pepper. Once the tomato paste mixture is finished, stir it into the crockpot.
  3. Cook on low for 4-6 hours. (Or on high for 3-4 hours)
  4. Stir in remaining ingredients. Turn the heat up to high, and cook for about 10 minutes, or until the tortellini is cooked.

Crock Pot Ranch Chicken & Mashed Potatoes



I found a recipe for Ranch Pork Chops but I didn't have any so i decided to use chicken. I also changed it up some. It came out great! Hubby loved it! I don't care for mashed potaoes so I had mine over rice. Was Yummy!

4 chicken breast, boneless 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz. can Cream of Chicken Soup
1 soup can of water
8 peeled, potatoes
5 Tbsp. real butter
3 Tbsp. Sour cream
1 cup milk ( might not need all of it, or might need more depending on consistency of potatoes)
 1/4 cup of Parmesan cheese
1/2 tsp. of garlic powder
1 tsp. salt, or to taste
1 tsp. pepper, or to taste …………






Place Ranch seasoning, soup, soup can of water, chicken and potatoes into crock pot, high heat for 4 hours or low heat for 6 hours






 Transfer potatoes to a bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add sour cream, butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.


Scoop chicken onto serving plates and top mashed potatoes soup gravy from crock pot.


I am not a mashed potato fan , so I made plain white rice and placed the chicken on top of that.

Sausage or Chicken Samich


I threw this recipe together  in the Crock pot, not knowing how it would turn out.
It came out really good! The hubby loved it, so It was a hit and I will make it again.  Happy Cooking - ENJOY ü
Make 6 sandwiches
INGREDIENTS
6 sausage or 6 Chicken Cutlets
1 can Hotdog Chili Sauce ( I used Steve's and Ed's Hot Dog Sauce)
1 Can Chicken Broth
1 can Fresh Cut Sliced Potatoes
Large Onion, sliced
mushrooms, canned or fresh
Long sandwich rolls
shredded cheese ( I used a mexican mix)

DIRECTIONS
Place the sausage in the crock pot. Add the can of chili sauce to crock pot  and fill the empty can half way with the chicken broth, stirring good  and add that to the crock pot along with the can of potaotes, sliced onion & mushrooms.
Stir to mix. Cook on low for 6 hours, Open half way through and stir.


Remove the sausage to a small plate, put aside. Spray a cookie sheet with pam and pour mixture onto the cookie sheet, spray with pam. Turn Broiler on and put the pan in and cook for 5 mins each side, but watch it doesnt burn!  You want it to be a bit crispy but not burnt!!

Take 6 sheets of  Aluminium foil , big enough to wrap the roll in.Take the sausage and slice in pieces ( or chicken shredded ) , crumbling some pieces into the roll. Sprinkle some cheese on top of sausage. Add the broiled mixture on top of that and sprinkle some more cheese on top of that.

  Place back in oven and broil a few mins, watch it doesnt burn! Just enough that the roll is toasted some and cheese is melted.     
 Serve with fries, onion rings or sweet potato fries

Crock Pot Breakfast Casserole

I found this recipe on Pinterest and have yet to try it..but it sure looks delicious
When my sons come with his gf and her kids they all love breaky foods and this would be a big hit. SO I will be making it when they come visit, since it makes so much.
Plus, what's even more beautiful about this is that my sons & gf sleep in so they
can serve themselves when they get up.
I also like this as I know I can change it up each time I make it.
I use Reynolds Slow Cooker Liners so I dont need to spray the bottom.

Ingredients:
1 package (32 oz.) of frozen hash brown potatoes
1 lb of bacon – cooked, drained and cut into pieces
1 lb of sausage, browned and drained
1/2 cup green onions – diced
1 green pepper – diced
3/4 pound cheddar cheese – shredded
1 dozen eggs
1 cup milk
1/4 teaspoon dry mustard
salt & pepper to taste

Directions:
Spray crock pot ( unless u r using Reynolds Slow Cooker Liner) and evenly spread hash browns at the bottom
Add sausage, bacon, onions, green pepper and cheese on top of hash browns.
Beat the eggs, milk and mustard, salt & pepper together.
Pour over the whole mixture.

Turn the crock pot on low for 8-10 hours or until eggs are set and thoroughly cooked.
