Pizza Pepperoni Monkey Bread


I plan to make this next time my sons come and the girls. They will love this. They LOVE Pepperoni. You can use any meat you like. 

You can take the long route and make your favorite pizza dough and marinara sauce, or the short route and pick up your favorite pizza dough and red sauce from the store. 

I plan to make it with the 2 girls ( grand daughters) , they love to help me cook when they are here. So depends on how much time we have, if we make home made dough.

INGREDIENTS


2 cloves garlic, thinly sliced
4 Tbsp butter
2 lbs pizza dough ( my basic pizza dough recipe) you can use store bought
6 oz mozzarella cheese, cut into small cubes (you'll need ~48 pieces)
48 slices of pepperoni (from 1 package)
2-3 cups marinara sauce, warmed, for serving

Weight Watchers Taco Casserole


This is a great taco casserole recipe the whole family will love.
I haven't made this yet but plan to this coming week. Hubby is one who goes on weight watchers and so good loses weight but starts to eat again. I am guilty of making wonderful dishes full of calories, so NOW I need to start remaking Weight Watcher dishes again, which are very yummy. My problem is I need to gain weight lol and I have to watch out for all this dairy , so I will be adjusting how much I put in which will make this even less points.

Ingredients

1 lb ground chicken 
1/2 cup onions, chopped
1/2 cup bell peppers, chopped
1 clove garlic
1 pkg taco seasoning mix
8 ozs taco sauce
1 cup fat-free sour cream
1 cup fat-free cottage cheese
1 cup low-fat tortilla chips, whole or broken up
1 cup low-fat cheddar cheese, shredded
3/4 cup salsa, for garnish (optional)

Directions


Heat oven to 400. Spray cooking spray on bottom of a 2-quart casserole dish set aside.


In a skillet, cook chicken, onion, peppers, and garlic clove until tender. Add seasoning mix and taco sauce; set aside.


In a medium bowl, combine sour cream and cottage cheese; set aside. Place half the broken chips in the bottom of casserole dish. Add meat mixture to cover the chips, then cover the meat with sour cream mixture.
Sprinkle with cheese and remaining crushed chips.
Bake for 30 mins, uncovered and cheese is all melted.


Top with 3/4 cup salsa if desired.




Makes 8 (1 Cup Servings) Old Points 6 Points Plus+ 7

Grilled Chicken Burgers



I know there are many ways of making burgers. Today I decided  to make my own version.  I used the spices I felt like.and I needed to use up mushrooms I had left over. I kinda made it all up as I went along. I also had left over hot dog chili sauce left over from the other night . 
Hubby said they came out Great!  I don't know as I didn't have all the good stuff on it. The burger i had was very good, moist and juicy!

1 LB ground chicken or turkey
2 teaspoons garlic powder
1 tsp. onion powder
1 tsp. paprika
2 tsp. Italian seasoning
1/4 to 1/2 cup fresh bread crumbs
8 squirts of soy sauce
1 onion, chopped
1 cup fresh chopped mushrooms
4 slices of bacon
6 slices of bread
Hot Dog chili sauce ( or any chili sauce you prefer)



Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion and the mushrooms.
Broil the bacon and then crumble into the onion and mushroom mixture. Saute on low for 5 mins. Set aside.



In a large bowl, combine the chicken and the spices, bread crumbs and soy sauce.
Cover and refrigerate for at least 1 hour or up to 4 hours














Meanwhile, build a charcoal fire in an outdoor grill Or, preheat a gas grill on High, then turn to medium.
Shape the chicken mixture into six 4-inch-wide patties.

Spray grill with Pam. Cook burgers about 15 to 30 mins turning once.

Remove to plate. Toast bread on both sides and place on plate.

Put one slice of bread on plate top with chicken burger.

 Add Hot dog chili sauce

I made Macaroni  Salad , I use small shells and 1 can white tuna fish and mayo.

Grilled Chicken or Steak Fajitas




I love fajitas, and cooking the meat and veggies on grill makes it all the more tastier!! Serve with Mexican Rice .  Happy Grilling! ENJOY  ü 






INGREDIENTS
1 pound boneless skinless chicken breasts, cut into strips OR          beef sirloin steak cut in strips
1 medium green pepper, cut into strips
1 medium red pepper, cut into strips
1 medium onion, cut into thin wedges
1/2 cup barbecue Sauce (I used bottled BBQ sauce , Sweet Baby Rays) 
8  Flour Tortillas, warmed
1 cup shredded cheese ( mexican )
1/2 cup sour cream




DIRECTIONS



Preheat grill to medium-high heat.
Place Chicken on skewers.
Poke holes in heavy duty aluminum foil and place veggies on it and place on grill along side chicken skewers
Place chicken and vegetables in pan. Place pan on grill; cover grill with lid.

Grill chicken and vegetables in pan 20 min. or until chicken is cooked through and vegetables are crisp-tender, stirring occasionally.










Spoon mixture evenly onto tortillas; top with cheese, salsa and sour cream. Roll up.

English Muffin Bread



This is an easy bread to make and tastes great!
It makes 1 loaf. Taste even better toasted with
butter and jelly or what ever you perfer.



3 cups unbleached all-purpose flour
1 Tbsp. sugar
1½ tsp. salt
¼ tsp. baking soda
1 Tbsp. instant yeast (not rapid rise)
1 cup milk
¼ cup water
2 Tbsp. vegetable oil or olive oil
Nonstick spray
Cornmeal for sprinkling in pan
1 Tbsp. melted butter


In the bowl  mix together flour, sugar, salt, baking soda, and yeast.

In a separate microwave-safe bowl, heat milk, water, and oil to around 125° F.
Using an instant-read probe thermometer is the best way to get a precise reading here, which is important because you want an accurate temperature to properly activate your yeast.

Pour the hot liquid over the dry ingredients in the mixing bowl and beat at high speed for 1 minute. The dough will be very soft and sticky.

Lightly spray an loaf pan , and sprinkle the bottom and sides with cornmeal. Scoop the soft dough into the pan, leveling it in the pan as much as possible.

Cover the pan loosely with plastic wrap or a lightly dampened dish towel. Move the dough to a draft-free, warm space in your kitchen (I put mine in the microwave). Let the dough rise till it’s just barely crowned over the rim of the pan which will take about an hour.


While the dough is rising, preheat the oven to 400° F.


Remove the cover, and bake the bread for 20 to 22 minutes or until golden brown and its interior temperature is 190° F.




Remove the bread from the oven, brush with melted butter, and after 5 minutes turn it out of the pan onto a rack to cool.
Let the bread cool completely before slicing.

Sausage or Chicken Samich


I threw this recipe together  in the Crock pot, not knowing how it would turn out.
It came out really good! The hubby loved it, so It was a hit and I will make it again.  Happy Cooking - ENJOY ü
Make 6 sandwiches
INGREDIENTS
6 sausage or 6 Chicken Cutlets
1 can Hotdog Chili Sauce ( I used Steve's and Ed's Hot Dog Sauce)
1 Can Chicken Broth
1 can Fresh Cut Sliced Potatoes
Large Onion, sliced
mushrooms, canned or fresh
Long sandwich rolls
shredded cheese ( I used a mexican mix)

DIRECTIONS
Place the sausage in the crock pot. Add the can of chili sauce to crock pot  and fill the empty can half way with the chicken broth, stirring good  and add that to the crock pot along with the can of potaotes, sliced onion & mushrooms.
Stir to mix. Cook on low for 6 hours, Open half way through and stir.


Remove the sausage to a small plate, put aside. Spray a cookie sheet with pam and pour mixture onto the cookie sheet, spray with pam. Turn Broiler on and put the pan in and cook for 5 mins each side, but watch it doesnt burn!  You want it to be a bit crispy but not burnt!!

Take 6 sheets of  Aluminium foil , big enough to wrap the roll in.Take the sausage and slice in pieces ( or chicken shredded ) , crumbling some pieces into the roll. Sprinkle some cheese on top of sausage. Add the broiled mixture on top of that and sprinkle some more cheese on top of that.

  Place back in oven and broil a few mins, watch it doesnt burn! Just enough that the roll is toasted some and cheese is melted.     
 Serve with fries, onion rings or sweet potato fries

IHOP Buttermilk Pancakes

I was surfing Pinterest tonight and came across this recipe for IHOP pancakes. I LOVE Pancakes and I LOVE IHOP. MY dad and I go often when I go visit him, especially since I been having such trouble eatting foods, one thing I can eat is pancakes. I can't use butter but i can use syrup. SO I just had to blog this recipe!! And share it with others.

Also you can add your favorite fillings or toppings. Try it with this home made Syrup



INGREDIENTS
1 1/4 C. Flour
1 1/2 tsp. Baking Powder
2 1/2 tsp. Sugar
1/2 tsp. Salt
1/2 tsp. Baking Soda
1/8 C. Vegetable Oil
1 Egg ( slightly beaten )
1 1/2 C. Buttermilk ( 1/8 - 1/4 C more if needed to keep batter thinner )


DIRECTIONS
Place first five ingredients into a bowl, add buttermilk, oil and egg. With a spoon mix all ingredients and beat until smooth.

Heat a frying pan or a griddle. Fry pancake on medium low heat. To a hot pan or griddle pour a little oil or spray with a none stick vegetable oil.

Pour batter to a desired size. Let batter start to show small bubbles on top before you turn pancake over to finish cooking.

Turning pancakes is made much easier if you spray your pancake turner with a none stick spray. The turner does not stick to the uncooked dough of pancake when you are turning them. If batter seams to be to thick add a little more buttermilk and mix well.

This recipe makes about nine 4" - 5" pancakes.


Serve warm with your favorite syrup.
