1905 Salad


Ingredients


Salad
·       1/2 head iceberg lettuce, shredded
·       2 ripe tomatoes, cut in eighths
·       2 stalks celery, sliced
·       1/2 cup Swiss cheese, cut in julienne strips
·       1/2 cup ham, cut in julienne strips (or turkey or shrimp)
·       1/4 cup green Spanish olives, pitted

Salad Dressing
·       4 cloves garlic, minced
·       1 teaspoon oregano
·       1 teaspoon Worcestershire sauce
·       1/2 cup extra-virgin Spanish olive oil
·       1/8 cup white wine vinegar
·       2 teaspoons lemon juice
·       Salt and pepper, to taste

·       2 teaspoons grated Romano

California Pasta Salad


Ingredients

For the Salad Dressing:

  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup Parmesan cheese
  • 1 tablespoon sesame seeds
  • 2 teaspoons dried oregano
  • 2 teaspoons poppy seeds
  • 2 cloves garlic finely minced
  • 1 teaspoon paprika
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt or more to taste

Patio Potato Salad


I am not big on potato salad. I am a macaroni salad type of gal. But hubby loves it and I always was picked to make potato salad for all the family BBQ's. 
I kept it simple potatoes, eggs and mayo. They loved it so much the bowl was always empty, that's why i was always asked to make it lol. 
Well I was surfing the web this morning and looking for something different and here is what i found. I will be making this tomorrow. I am sure it is going to be a big hit.

8-10 Servings

INGREDIENTS

1/4 cup sugar
1 tablespoon cornstarch
1 to 1 1/2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon celery seed
1/2 cup milk
1/4 cup vinegar
1 egg, beaten
1/4 cup butter or margarine, cubed
1/4 cup chopped onion
1/4 cup mayonnaise
7 medium red potatoes, peel if u like, cook and cube them
3 hard-cooked eggs, chopped
Lettuce leaves and paprika, optional

DIRECTIONS

Put potatoes in a pan and cover them with cold water. Cook on medium-high heat  for 20 minutes. Check them for doneness after 15 minutes. Drain them when they're done and let them cool while you're working on the sauce. 

Place eggs  in a pan, cover them with cold water, bring to a boil, boil for 2 minutes, turn off heat, cover, and set timer for 12 minutes. Transfer to ice water bath until cooled, then peel and chop. 



In a saucepan, combine sugar, cornstarch, mustard, salt and celery seed.
Stir in the milk, vinegar and egg until smooth. Add butter. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Cool. Stir in onion and mayonnaise.

In a large bowl, combine potatoes and hard-cooked eggs. Add dressing and toss gently to coat. Cover and refrigerate for at least 1 hour.

If desired, serve in a lettuce-lined bowl and sprinkle with paprika.

Grilled Chicken Burgers



I know there are many ways of making burgers. Today I decided  to make my own version.  I used the spices I felt like.and I needed to use up mushrooms I had left over. I kinda made it all up as I went along. I also had left over hot dog chili sauce left over from the other night . 
Hubby said they came out Great!  I don't know as I didn't have all the good stuff on it. The burger i had was very good, moist and juicy!

1 LB ground chicken or turkey
2 teaspoons garlic powder
1 tsp. onion powder
1 tsp. paprika
2 tsp. Italian seasoning
1/4 to 1/2 cup fresh bread crumbs
8 squirts of soy sauce
1 onion, chopped
1 cup fresh chopped mushrooms
4 slices of bacon
6 slices of bread
Hot Dog chili sauce ( or any chili sauce you prefer)



Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion and the mushrooms.
Broil the bacon and then crumble into the onion and mushroom mixture. Saute on low for 5 mins. Set aside.



In a large bowl, combine the chicken and the spices, bread crumbs and soy sauce.
Cover and refrigerate for at least 1 hour or up to 4 hours














Meanwhile, build a charcoal fire in an outdoor grill Or, preheat a gas grill on High, then turn to medium.
Shape the chicken mixture into six 4-inch-wide patties.

Spray grill with Pam. Cook burgers about 15 to 30 mins turning once.

Remove to plate. Toast bread on both sides and place on plate.

Put one slice of bread on plate top with chicken burger.

 Add Hot dog chili sauce

I made Macaroni  Salad , I use small shells and 1 can white tuna fish and mayo.
